portobello mushroom

zucchini

washed and cubed

tuscan (lacinato) kale
chopped (stems removed)

container bone broth
or sub broth of choice

organic diced tomatoes
with garlic and basil

Instructions
Add the olive oil, chopped onion, and garlic to a large soup pot over medium high heat. Cook until onions soften.
Add in the mushrooms, zucchini, spices, and herbs. Toss all ingredients and cook through.
Add the broth.
Add 4-5 (I prefer 5) cups of water.
Add the cannellini beans
Add diced tomatoes, chopped kale, and sweet potatoes.
Reduce heat to medium low. Cook for 25 minutes.
