  1. Rinse the kale in cold water and pat dry with a paper towel. Chop the stems off the kale and discard the stems in the trash or compost bin.
  2. Tear all of the kale leaves in pieces about an inch in length. Place in a mixing bowl.
  3. Add the olive oil and massage kale leaves for 2 minutes.
  4. Add the remainder of the ingredients. Toss well. Serve immediately, or store in the refrigerator overnight for a more flavorful salad.
