Blackberry Lemon Lavender Cupcakes
Doctor up a gluten free yellow cake mix to create these divine birthday cupcakes. A bit of lemon and culinary lavender creates a fresh taste that compliments the sweet cake mix. A healthier version to savor, gluten and guilt free!

CAKE

box
Gluten free yellow cake mix
I use King Arthur Flour
1
cup
fresh blackberries, cut in half
2
tsp
pure vanilla extract
1
lemon rind
grated
2
tsp
culinary lavender
FROSTING
1
jar
Organic vanilla frosting
2
packets
one blue and one pink plant based food coloring
Instructions
CAKE
Follow the instructions on the cake mix box. To make this recipe dairy free you can use a butter alternative such as Earth Balance butter.
Add the vanilla, lemon zest, lavender, and blackberries to the mix.
Use a spatula to fold the blackberries and other ingredients into the mixture.
Spoon into 24 cupcake liners in a cupcake mold.
Bake 20-25 minutes or until tops just start to turn golden.
FROSTING
As the cupcakes cool, mix the food coloring into the frosting.
Use a knife or cake piping tool to frost the cupcakes. We use a ziploc bag with one corner cut off to create a DIY frosting tool.
