Tis’ the season for turkey hunting. I am grateful for my hunter man right now because due to COVID-19 it has been very difficult to keep up with our supply of organic and pasture-raised meat. Having a family of 6 we need a plan B, which means it’s wild game time. Oh yeah.
Wild turkey is a little bit tougher than other turkey, which turns some people off, but this recipe helps give the turkey flavor throughout. My kids and husband love it!
This recipe can work for other meats as well, such as rotisserie chicken. I love my Instant Pot! If you haven’t purchased an Instant Pot yet, you need to. I promise it is such a game changing time saver. Here is the one I use.

whole wild turkey

- 1 whole Wild turkey or other poultry
- 1-3 tsp Avocado oil avocado is my go to for high heat, as it has a high smoke point
- 1 tsp salt heaping
- 1 tsp black pepper
- 1 tsp basil
- 1 tsp Thyme
- 3-4 cloves Whole garlic
- 1/2 medium Lemon juiced
- 1/2 medium Yellow onion cut into 1/2 rings
- 1/2 cup vegetable broth sub: turkey or chicken bone broth

- Add the oil to the instant and press saute.
- Add the garlic cloves (whole) to the instant pot.
- As the oil warms up, mix the salt, pepper, basil, and thyme in a small dish.
- Rub the mixture onto all areas of the turkey breast.
- Sear each piece of turkey in the instant pot, 1 minute each side, or until golden brown.
- Turn the Instant Pot off (cancel). Add the steam rack with handles to the instant pot. Put the meat on top of the rack in the Instant Pot.
- Lay the onion out on top of the turkey.
- Add the juice of the 1/2 lemon to the instant pot
- Add the broth.
- Seal the Instant Pot. Set it at manual, 40 minutes.
- Let the Instant Pot vent naturally (about 10 minutes).
- Remove the meat. Save the juice to add to the meat for extra flavor.
